Just came up with a simple snack which I’m sure someone else has thought of but I never heard of anything like it so I’m claiming invention of it so there. 🙂
Maybe snack isn’t the right word, but it’s good enough. I wanted a little something and once again, even though I’ve got various food fixings, nothing appealed to me. So I got some potato rolls out of the freezer, defrosted them some in the microwave, and toasted them in the toaster over. One was a bit mushy, the others kind of overdone. I’ve often said that if you learn from your mistakes, than I should be a mega-genius. But you never know until you try.
It helped that I melted some margarine and butter in a bowl, like I do when making popcorn. I was going to pour it over the bread, but decided to dunk instead. It softened the hard bread somewhat. But I still had a yen for something else. From some unknown place potatoes popped into my head.
I mentioned previously that potatoes are one of my staples. I am Irish, after all, and my grandfather used to own a potato chip factory in Philadelphia. A bag of them is still relatively cheap, considering how many meals and/or side dishes you can get. The easiest thing is sticking one in the microwave and cooking it there, especially since most microwaves have a baked potato button. Poke some holes in it with a fork or knife, though, or it can explode. Now I slice it in half before putting it in, since it’ll singe your fingers if you try after.
This time I tried something a bit different. I diced up a red potato into chunks (not too small), put some margarine on top and poured on some olive oil, sprinkled with salt and pepper and garlic powder. I cooked it in 1 minute installments, stirring so it cooked more evenly. It took about 6 minutes. It wasn’t very salty, even though I feared I oversalted it. Another quick thing to add to the repertoire. Might try adding a few veggies (onion, maybe) next time.
